So, I'm working on an old 1/100 Sandrock custom and I was trying to figure out what is the best way to handle inside the legs. Since they're hollow, is black the best choice?

What do the other modelers here do for the legs, any special treatment?

I tend to think straight black is a bit too stark.  For "don't look here" colors I usually prefer something a bit more neutral, like a flat dark gray.

Most of the time I don't go to great lengths to get those areas painted - but I'm thinking about adding that as a pre-assembly step to my process.

I use a brush and paint the insides with Aircraft Interior Black right before assembly.  It's just a shade lighter than black and doesn't clash with dark or flat black paint schemes.

I just paint such places the same color as my other "internals", such as the knee and elbow joints. This color is usually a dark metallic gray.

In this picture the insides of the shoulder armor are painted the same color as the hands, shoulder joints and backpack:
